Hospitality training event delves in to the art of sustainable cooking

The Hospitality Department at DkIT recently delivered a two-day training programme in partnership with the Soil Association.


With over 75 years of experience, the Soil Association is a charity dedicated to a future of good health, in balance with nature, and a safe climate.  The Soil Association operates as the UK's largest organic certification body, and has developed world-leading standards for food, farming, health, and the environment, making them an outstanding partner for this programme. 

This event was fully funded through SATLE and welcomed students and staff from DkIT's Culinary Arts programme for an immersive two days focused on sustainability in the professional kitchen. 

Participants explored how to plan and cook sustainable meals, calculate the environmental and economic benefits of sustainable food choices, and use cutting-edge digital tools including CoolFood Pro to measure the carbon footprint of menus and identify practical ways to reduce their environmental impact.

 The training provided a clear, actionable pathway towards more sustainable catering practices across the department. Upon successful completion, all participants received an official certificate of achievement from the Soil Association, recognising their commitment to a greener, more responsible approach to food.
