Course Overview
Food production encompasses a complex series of activities across the entire food chain, from farm to fork. The safety and quality of the final product are determined by the standards maintained at each stage of this chain. This 10-credit module adopts a systems approach to food safety and quality management, focusing on achieving sustainable and high-quality outputs throughout food production systems.
Students will critically evaluate factors constraining food product quality and apply the principles of Process Quality Management to maintain and improve safety and quality standards. The module provides an in-depth analysis of key quality management systems including ISO 9001, ISO 22000, BRC, Bord Bia standards, Total Quality Management and Hazard Analysis Critical Control Point (HACCP).
Learners will critically analyse the differences between private standards and legislation, reflecting on their implementation and impact. Risk analysis and its role in the formulation of Food Safety Objectives (FSOs) will be explored in detail. Additionally, students will gain critical insight into the development, enforcement and global influence of legislation and standards within a sustainable food industry, including the role of Codex Alimentarius in shaping these frameworks.
Through this comprehensive study, participants will develop the knowledge, skills and competence required to lead quality and safety initiatives in the evolving food production landscape.

Entry requirements
Applicants must have a minimum of a second-class honours degree (Grade 2) in Agriculture, Food Science, Science, Business, Engineering or related disciplines. This course is aimed at those who are either working in the food industry and would like to reskill to gain an additional qualification or for those who do not have a specific background in food and would like to upskill in this area.
For candidates who do not meet the above entry criteria but have considerable relevant experience in the agri-food sector, the DkIT Recognition of Prior Learning (RPL) policy and procedures will be applied.
