Culinary Arts and Hospitality Management Students Launch DkIT Pop-Up Restaurant

Culinary Arts and Hospitality Management students from Dundalk Institute of Technology (DkIT) launched this year’s ‘D'Kitchen’ Pop-up Restaurant, an annual event that took place from Monday 4th to Friday 8th March, with the DkIT Hospitality training restaurant, training bar and training production kitchen handed over to students from both courses, to run commercially for the week.



Guided through the process by a team of lecturers in the Hospitality Department, students from both courses were required to collaborate in order to plan, operate and effectively manage a series of food production and service cycles in a real life situation. Over the course of the week, the restaurant was opened to the general public for lunch and dinner, as well as hosting an afternoon tea, morning coffee, brunch, a wings and taco bar and a 7-course taste dinner. The students took full responsibility for the menu planning, food ordering, purchasing, budgeting, sales, marketing and advertising, social media promotion and the operation of the kitchen and restaurant.

Speaking about the initiative, Maria Roddy-Freyne, Lecturer in the Department of Business Studies commented:

“When introduced 3 years ago this was a completely new initiative within the Hospitality department and a unique approach nationally in the delivery of course modules. This approach has a wide-ranging impact on student learning and really helps students to gain valuable industry relevant skills.”

The students were given a lot of autonomy throughout the process which significantly contributes to their learning, with the event in the past receiving wide acclaim among the wider college community, both staff and students and the general public.
